What’s a “Baker’s Dozen”?

A Baker’s dozen means when you buy 12, you get the 13th cookie free!
According to Encyclopedia Brittanica: “There are a few theories as to why a baker’s dozen became 13, but the most widely accepted one has to do with avoiding a beating. In medieval England there were laws that related the price of bread to the price of the wheat used to make it. Bakers who were found to be “cheating” their customers by overpricing undersized loaves were subject to strict punishment, including fines or flogging. Even with careful planning, it is difficult to ensure that all of your baked goods come out the same size; there may be fluctuations in rising and baking and air content, and many of these bakers didn’t even have scales to weigh their dough. For fear of accidentally coming up short, they would throw in a bit extra to ensure that they wouldn’t end up with a surprise flogging later. In fact, sometimes a baker’s dozen was 14—just to be extra sure.”

Why do you need 1 day’s advance ordering on Cookies/Brownies and 2 days advance for Bread?

We are a “micro-bakery” that makes items to order. In order for us to provide the highest quality cookies and brownies, we need the time to work our magic through our secret recipes.  Making naturally leavened bread is a long process and letting the natural fermentation take place is what makes our bread rise and taste so delicious.

Is Sourdough really “sour”?

The ‘sour’ flavor of naturally leavened bread can be increased or decreased depending on different variables in the process of making the bread. There is natural lactic acid, bacteria, and yeast in the fermented mixture of flour and water. Broadly speaking, the yeast produces gas (carbon dioxide) which leavens the dough, and the lactic acid bacteria produce lactic acid, which contributes flavor in the form of sourness. At Mykul’s Micrtobakes we strive to make our delicious bread as ‘sour’ as appropriate to the kind of loaf we are baking.

What’s a “Cottage Food Law”?

This is the permit administered by New York State that allows me to bake and provide food products in accordance with the law and professionally out of my home.

I have an allergy to…?

If you have any food allergies, we sadly but strongly advise against eating any items purchased from our bakery. In our kitchen, our products may contain gluten, eggs, dairy, soy, peanuts, and tree nuts. Although every effort is made to prevent cross-contamination, items may have trace amounts of these allergens. If you have a specific question about an item from Mykul’s Microbakes, we will do our best to answer you, but please know we have secret and proprietary recipes and cannot always answer every question.

What about preservatives?

We don’t any any preservatives and this is why we only do local pick-up and delivery. However, there may be products we do include in our bakes contain preservatives for freshness and were manufactured by other companies. We always strive to do our best to provide the most wholesome baked goods available.

My dog ate my chocolate…?

Please contact your Vet or other emergency veterinary practice immediately. We apologize but we do not divulge amounts of specific ingredients or percentages. We are huge animal lovers too. But, the variables are too great and you should follow the advice of a Veterinarian. 

What is your return/refund policy?

Please know that while there are no returns or refunds on baked goods from Mykul’s Microbakes, I will be happy to replace an item with which you are dissatisfied with the same or other items at any time with no questions asked. Our goal is always to provide you with the highest quality baked goods and services available.

About Shipping

I am in or near Manhattan – can I pick up my microbakes?

Yes! Contactless pick up is available by appointment Mon-Sat, from 5pm to 7pm at 179th Street and Fort Washington. You will be asked to set your pickup time at check out, at which point you will receive more detailed instructions.

Depending on weather, pick up from J Hood Wright Dog Park may also be available.

What are your delivery rates and where do you deliver to?

COMING SOON! Delivery within Manhattan will be available Tues and Saturdays ONLY from 5pm-7pm. Rates range from $3-10 depending on your location and is delivered by courier.

What about the shipping rates?

Shipping freshly baked goods requires us to ship them to you in the fastest yet (we hope) in the most affordable ways possible. We want them to arrive as close to the same condition as the day we bake them. Additionally, we must use special packaging so they can arrive in the finest condition. If you prefer, we do offer local pick-up at our location in Washington Heights, NYC.

Select single loaves and cookies & traybakes in counts of 6 only are available to ship within New York State via Priority Mail for $16.

Can you ship to me outside of New York State?

No. Unfortunately, at this time, due to New York State Cottage Food Laws I am only permitted to ship to customers within the state of New York. All orders placed outside of New York will be canceled and refunded
